Vegan Banana Muffins

  Who doesn’t love banana muffins? Well I have an uncomplicated recipe that will not only satisfy your tongue, but make you never miss the animal products absent in it!  For 12 delicious muffins, grab:  A little over 1.5 cups  of all-purpose flour 3/4 cup  rolled oats 1 tablespoon  cinnamon 1 teaspoon  ginger 2 teaspoons  baking powder 1 teaspoon  baking soda 1.5 teaspoon  kosher salt 1.5 cup  maple syrup 3 large bananas 1.5 cup  coconut oil (half melted and half room temperature) 1 tablespoon  vanilla extract 1/4 cup  turbinado sugar (or brown sugar) Before doing anything, preheat your oven to 350 degrees Fahrenheit!  In one bowl, add the oats, cinnamon, most of the flour (put 2 tbsp aside), ginger, baking powder, baking soda, and salt together.  In another bowl,  (after melting the oil) mix the coconut oil, the maple syrup, mashed banana, and vanilla.
